Sweet & Spicy Summer Salad


The sweet and spicy flavours remind me of my travels in Asia. I really love the combination of bright colours and different textures in this salad which makes a perfect addition to your summer menu - as a side dish or on its own.

Serves 2


1/2 white cabbage, sliced
1 courgette, shaved
1 carrot, shaved
1 big handful of chopped spinach
5 big red radishes, sliced
1/2 cup of boiled red & white quinoa with bulgar wheat
Chopped coriander to decorate
Toasted cashew nuts to decorate


1 tbsp of olive oil
1 tbsp of sweet chilli sauce
1/2 lime squeezed
1/2 tsp of fresh ginger (grated or pressed)
50ml of water


1. Slice, shave and chop all the vegetables as described and mix them together.

2. Combine all the ingredients to make a dressing and pour over the salad. 

3. Toast the cashew nuts and chop some coriander leaves to decorate your salad.
